Ingredients
Batter
- 225g plain flour
- 2 eggs
- 600ml milk
- pinch of salt
Apples:
- 900g cooking apples
- 400ml runny honey
Method
The batter. Sift together the flour and salt into a mixing bowl. Form a well in the centre and crack in the eggs. Add a little of the milk and whisk to combine then gradually beat in the remaining milk to form a smooth batter. Cover with a cloth and set aside to rest for at least 1 hour.
After the batter has rested, prepare the pudding. Peel and core the apples then cut into 1cm thick slices. Thoroughly grease a 2l casserole dish with plenty of butter then arrange the apples in this as overlapping rings. Carefully pour over the honey, ensuring that the apples are all well coated. Whisk the batter well to aerate then pour over the apple and honey mix.
Transfer to an oven pre-heated to 180°C and bake for about 60 minutes, or until the batter is set and golden brown. Remove from the oven and allow to cool for 10 minutes before serving. Serve hot, accompanied with custard.
